Burger Joint Onion Rings

1 large onion
1/2 cup all-purpose flour
1/2 tsp. baking powder
1/2 tsp. salt
1 egg
1/2 cup 2% milk
1/4 cup plus 2 TBSP. dry bread crumbs
Oil for deep-fat frying
1/2 tsp. seasoned salt


Cut onion into 14-in. slices; separate into rings.  In a shallow bowl, combine the flour, baking powder and salt.  In another shallow bowl, whisk egg and milk.  Place bread crumbs in a third shallow bowl.  Coat onion with flour mixture, then dip in egg mixture and coat with bread crumbs.
In an electric skillet or deep fryer, heat oil to 375 degrees.  Fry onion rings, a few at a time, for 30 seconds on each side or until golden brown.  Drain on paper towels.  Sprinkle with seasoned salt. Yield: 4 servings.




Never Fail Pie Crust

This is a recipe that was used by my mother in everyone of her pies, and it always won praise!  I love it too because it is simple to make and tastes great by itself even!

3 c. flour unsifted
1 tsp. salt
5 TBSP water
11/4 c. shortening
1 egg well beaten
1 TBSP white vinegar

Cut shortening into flour and salt.  Combine egg, water and vinegar.  Pour liquid into flour mixture all at once.  Blend with spoon just until flour is moistened.  Makes 2 double crusts.  Can keep 1 week in refrigerator.






Easy Mix Chocolate Cake

11/2 c. flour
1 c. sugar
3 TBSP. Cocoa
1 tsp. baking soda
1 pinch salt
1 TBSP vinegar
1 tsp. vanilla
1 c. water
1 c. chopped nuts
6 TBSP. cooking oil

Mix with fork.  Make 3 holes, 1 large and 2 small.  Add 6 TBSP. oil in large hole.  Put 1 TBSP vinegar in 1 small hole.  Put 1 tsp. vanilla in another hole.  Mix 1 c. water over all...stir with fork until blended.  Add 1 c. chopped nuts and bake 350 for 25 minutes.  Instead of water you can use 1/2 coffee and 1/2 water or all coffee.  Put in 8x8 ungreased pan.

This is undoubtedly the easiest cake recipe you'll ever make!


Granny J's Creole Slaw


1 head cabbage or bag of shredded cabbage
1 TBSP each of white, yellow and red onion
1/2 green bell pepper
1 grated carrot
1 cup Miracle Whip Salad Dressing
1 TBSP white vinegar
1 TBSP olive oil
1 TBSP sugar
1 tsp. Tony Chachere's Creole Seasoning
1/2 tsp lemon pepper
1 TBSP. water


Mix vegetables.  Mix dressing together well and pour over slowly, mixing in between thoroughly.  Best if let set up overnight in refrigerator, but can serve right away if need be.  Serves 6-8


Oatmeal Cookies


This recipe I found with my mom's and you can tell how old it is by one of  the ingredients.  I've put what it originally calls for, but in parenthesis I put what we use or call it today.


1/2c. fat (shortening)!
1 c. brown sugar
1/2c. sugar
2 eggs beaten
1/4 c. milk
2 c. oatmeal
11/2c. flour
1tsp. baking soda
1 c. nuts
1 c. raisins
1/4 tsp. salt
1 tsp. cinnamon
1 tsp vanilla
Mix in order given and bake at 350' for 10-12 minutes on greased sheet.







Aunt Florence's Fried Apples
6 large apples (about 6 cups, sliced)
1/4 cups butter
1/4 cups water
1/3 cups light brown sugar
2 Tbs lemon juice
1 tsp cinnamon

1. Core, peel and slice apples into thick slices. Place into a medium size skillet with butter and water.
2. Cook over medium heat, stirring to prevent sticking. Continue cooking until barely tender.
3. Mix the brown sugar and cinnamon together. Sprinkle the apples with brown sugar and lemon juice. Toss and cover the skillet.
Let stand for ten minutes.

Grandma's Pumpkin Pie
1/12 C. Pumpkin
3/4 c. sugar
1/2 tsp. salt
1-1 1/2 tsp. cinnamon
1/2-1 tsp. ginger
1/4-1/2 tsp. cloves
1/4-1/2 tsp. nutmeg
3 slightly beaten eggs
1 1/4 c. milk
1 6 oz, can evaporated milk
Mix all ingredients well and pour into a 9" pastry shell.  Bake at 400* 50 minutes or until knife comes out clean.
This was my Great grandma Brookshier's recipe and is the spiciest, best tasting recipe I've ever had.


Mandarin Orange Cake
2 cups sugar
2 cups flour
2 tsp. Baking soda
1/2 tsp. salt
2 eggs(beaten)
2 11 1/2 oz. well drained mandarin oranges 
Sift and add beaten eggs then add drained oranges, then beat 4 minutes low speed.
Pour into 9x13 greased pan Bake at 350* 30-35 minutes then....
When hot from the oven, have ready before hand....
3/4 c. brown sugar
3 TBSP. milk
2 TBSP. butter    Mix together in sauce pan and bring to boil.  Pour this mixture over the cake straight from the oven.  Hint:  poke a few holes in top of cake to allow topping to seep into cake!



Feeling nostalgic or just wanting to enjoy an old-fashioned meal? Following are recipes to help you create an entire meal like grandma used to make. All these recipes are from my vintage recipe collection. Start with a chicken casserole, add baked orange-pecan sweet potatoes, iceberg lettuce and tomato salad with Mason Jar French Dressing, and enjoy an old Southern Indiana favorite, Applesauce Cake, for dessert.
This chicken casserole recipe is from a 1975 magazine called THE WORKBASKET. The Workbasket was a small magazine that was chocked full of recipes, knitting and crocheting instructions. Many a rural housewife waited anxiously for the local mailman to drop her monthly edition into her mailbox.
CHICKEN CASSEROLE
2 cups diced cooked chicken
2 cups diced celery
1/2 cup slivered almonds
1/2 tsp salt
2 tbsp chopped onion
2 tbsp lemon juice
1 cup mayonnaise
1/2 tsp monosodium glutamate, optional
1/2 cup grated cheese
1 cup crushed potato chips
In greased 2-qt casserole, combine ingredients, topping mixture with cheese and chips. Bake at 450 degrees for 12 minutes or until bubbly.
ORANGE PECAN SWEET POTATOES
A recipe from the ARGO Cornstarch folks.
3 lbs. sweet potatoes, peeled
1/2 cup chopped toasted pecans
1 cup brown sugar
2 tbsp Argo Corn Starch
1 cup orange juice
2 tbsp butter
1 tsp vanilla extract
Spray a 3 quart (13 x 9-in) baking dish with cooking spray. Add sweet potatoes and pecans to dish. Combine brown sugar and corn starch in a small saucepan. Gradually add orange juice, whisking to blend. Cook over high heat, stirring constantly, until mixture boils. Reduce heat and simmer 2 to 3 minutes. Remove from heat, add butter and vanilla. Pour over sweet potatoes. Bake in a preheated 350 degree oven for 45 minutes or until edges are browned and bubbly.
ICEBERG LETTUCE AND TOMATO SALAD WITH MASON JAR FRENCH DRESSING
1 head lettuce, broken into bite-size pieces
2 tomatoes, quartered
FRENCH MASON JAR DRESSING
1 can tomato soup
1/2 cup vinegar
1/2 cup oil
1/4 cup sugar
1 tsp salt
1/2 tsp paprika
1/2 tsp pepper
1/2 tsp prepared mustard
1 small finely chopped onion
1/2 tsp celery seed
Beat all ingredients together and store in a covered jar in the refrigerator. Makes 3/4 quart.
APPLESAUCE CAKE
This is another good old family recipe from Southern Indiana.
1 1/2 cup sugar
1/4 cup shortening or oleo
1 egg
1 1/2 cups unsweetened applesauce
1 tsp cinnamon
1/2 tsp cloves
2 cups flour
1/4 tsp salt
2 tsp soda
1 tsp vanilla
1 cup raisins
1/2 cup nuts, optional
In a large mixing bowl, mix all ingredients together except raisins and nuts. Blend with electric mixer until well blended. Add raisins and nuts. Pour into a greased 9 x 13-inch baking pan and bake in a 375 degree oven approximately 45 minutes or until done.
